Sooo...is anyone still there?


So, I've been gone for a while.  Life has been really up and really down with a lot in the middle.  I still cook, but not nearly as much.  I find that it isn't really as cathartic as it used to be, which honestly bums me out.  However, I do occasionally come across a recipe that is just too good not to share.  This one my sister recommended and I made it for a very healing weekend spent away with dear dear girlfriends from our time spent in the DC Area.  We cried, we laughed, we sewed, we slept, and most importantly we ate delicious food.






I barbequed (or grilled if you aren't from California) these babies all by myself (with telephone conference from the hubs) and they turned out PERFECT.  Seriously, never had better grilled chicken!  So juicy and tasty and perfect for getting me out of my failure to cook slump!

Rosemary-Garlic Chicken with Lemon 
Zov: Recipes and Memories from the Heart ~ serves 8

Ingredients
3 Tbsp fresh lemon juice
2 Tbsp minced garlic
1 Tbsp chopped fresh thyme
1 Tbsp salt
1/2 tsp ground black pepper
1/4 cup plus 2 Tbsp olive oil
8 boneless chicken breasts (w/ skin on - however, I just use 4 boneless skinless from Sam's or Costco and I fillet them to make 8)
Italian parsley or rosemary sprigs, for garnish
Lemon wedge for garnish

Instructions
Whisk the lemon juice, garlic, rosemary, thyme, salt, pepper, and 1/4 cup oil in a large bowl to blend.  Add the chicken and toss well to coat.  (I do it all in a gallon ziploc).  Cover and refrigerate, tossing occasionally, for at least 1 hour or up to 2 days (I do at least 24 hours.)

Prepare the barbecue for medium-high heat.  Grill the chicken breasts until they are just cooked through the golden brown, about 4 minutes per side.  Transfer the chicken to a platter.  Garnish with the parsley or rosemary sprigs and lemon wedges.

When grilling the chicken, position the rack fairly close the the heat source to help seal in the juices that keep the chicken tender and succulent.  A chicken breast is cooked perfectly when it reaches 160*F (use and instant-read meat thermometer).  If you exceed the temperature, the chicken is considered overcooked and will most likely yield a stringing or rubbery texture.

The marinated chicken is also delicious when broiled

Try using bold flavors in your marinade such as lime juice, more garlic, or more fresh thyme.

Springtime Bleus

We woke up before the sun each morning - breathtaking over the Atlantic Ocean, isn't it?
We have thoroughly embraced Spring, despite its fairly late arrival!  My friends in Kansas are experiencing snow this week, so I won't complain any further!  We have made two trips to the beach, one freezing and full of the stomach bug and one absolutely spectacular!  We were fortunate enough to be invited to a friend's family beach house in South Carolina.  It was terrific (as Owen says)!!!  We got to visit with old friends, adopt a new set of grandparents (thanks Annie for sharing!) and listen to the waves crash on the shore as we fell asleep each night.  DE-lightful.


My favorite part of the week was seeing the boys discover their love of the sea!  Elliott was adorable - he loved raking the sand under his fingers and eating all the sand toys.  Owen was all about the "sea" as he called it.  He was perpetually in the water, getting buckets of water for his sand castles, and fishing for "seafood" for dinner.

I taught Owen how to make drippy castles.  Growing up I spent endless days on the beach with my cousins and sister making spectacular drippy castles!  

The night before we left for the beach, I made a delightful Skinny Chicken Cordon Bleu.  As I have mentioned before, I am not a ham fan.  But lately, the tide has been turning - what the what?  I never thought there would be a day when I'd voluntarily purchase and cook with ham.  Alas, the day has arrived!

 


Skinny Chicken Cordon Bleu

~ serves 6 ~

Ingredients
Cooking spray
12 thin sliced (36 oz total) skinless boneless chicken breasts, 3 oz each (I used 4 large chicken cutlets)
Salt and fresh cracked pepper
1 large egg (I had one egg in the fridge, so I made due and added a little water)
2 large egg whites
1 tbsp water
1/2 cup seasoned breadcrumbs
1/4 cup grated parmesan cheese
5 oz (6 slices) thinly sliced lean deli ham, sliced in half (I didn't slice the ham or swiss in half and totally should have)
6 slices (4.4 oz) Sargento reduced fat Swiss cheese, cut in half (Trader Joe's has pre-sliced low fat Swiss)

Instructions
Preheat oven to 450°. Spray a large non-stick baking sheet with cooking sprayWash and dry the chicken cutlets; lightly pound the chicken to make thinner and lightly season with salt and black pepper.  (My grocery store sells thinly sliced chicken cutlets so I didn't need to pound them any thinner.)

Lay the chicken on a working surface and place a slice of ham on top of the chicken, then the cheese and roll, setting them aside seam side down.  (I neglected to put the seam side down on one breast and as it cooked it popped open and was a bit of a mess.)

In a medium bowl, whisk eggs and egg whites along with water to make an egg wash. (I only made four cutlets, so one egg with some water was plenty.)  In another medium bowl, combine breadcrumbs and parmesan cheese.  Dip the chicken into the egg wash, then into the breadcrumbs.  Place chicken onto the baking sheet seem side down. Spray the top of the chicken with more cooking spray and bake about 25 minutes, or until until cooked.

Brought to you by City Market


I have a few minutes to myself this morning as J took Mr. Man on an adventure, AKA: errands!  I thought I would, for once, follow through on posting when I say I will!  And I have a feeling that once B2 makes his or her debut, there will be v. little cooking, let alone blogging!

Like I said, we went to the C'ville Farmers Market, locally referred to as the City Market - bestill my heart, it runs through December!  We bought some gorgeous heirloom tomatoes for a steal ($3.60 a pound, I paid upwards of $6/lb in Seattle!) and a heaping bouquet of basil so I decided to make these yummy Pesto Chicken Burgers!

Pesto Chicken Burgers
Adapted from Everyday Food, July/August 2012 ~ serves 4

Ingredients
1 cup fresh basil leaves
1 cup fresh spinach (I love that this is pseudo healthy pesto!)
1 clove garlic, peeled and quartered
1/4 cup walnuts
4 Tbsp olive oil, plus more for grilling
Coarse salt and pepper
1 pound ground white-meat Chicken (surprisingly hard to come by - I had to go to two stores to find it.  I did find ground turkey with "natural flavorings."  Huh?  If you are flavoring the turkey, I suspect it isn't all that natural...)
3 ounces fresh mozzarella, sliced (tip: pop the mozzarella in the freezer about 30 minutes before you slice it, makes it much easier!)
4 buns (the recipe calls for focaccia and it was a huge flop for us - we tried this recipe once before and the the focaccia fully fell apart and was a huge disappointment)

Instructions
1.  In a food processor, puree basil, spinach, garlic, walnuts, oil, and 1 tablespoon water.  Season pesto with salt and pepper.  (We made this pesto last week and still have a ton and it keeps nicely!)

2.  Heat a grill or grill pan to medium-high.  Combine 1 tablespoon pesto, 3/4 teaspoon salt, and 1/4 teaspoon pepper (I eyeballed the salt and pep) and chicken and form into 4 patties.  Clean and lightly oil hot grill.  (Okay, the recipe also said to brush tomatoes with oil and season with salt and pepper and grill with the patties - I do not like grilled tomatoes so we skipped this step.)  Grill patties, covered, 4 minutes.  Flip patties and top with cheese.  (At this point you add the tomatoes, flipping once until they are lightly charred.)  Grill burgers for 4 more minutes or until they are opaque throughout.

3.  Assemble burgers by spreading pesto on each side of the bun, add toms and lettuce.  I added a bit of mayo because I hate a dry burger!

Girlfriend's Culinary Weekend - Part 1

Over Memorial Day weekend, my loving hubs bought me airline tickets to meet up with my 7 oldest friends for a Girlfriend Weekend!  IT WAS FABULOUS!  The last time all 8 of us were together was my wedding in 2008!



I love these ladies!  We spent the entire weekend catching up, eating, drinking delightful margs (for those who were not pregs, of course) and just enjoying spending time with one another!  Our gracious host, the other Megan, not only cooked every meal (with a smile on her face),  she also planned a little day trip for lunch in a little town in the foothills called Evergreen.  We ate at Creekside Cellars and I wish I could have lunch there every Saturday with the girls! 

I ordered the heirloom tomato caprese salad with 12 year aged balsamic reduction - holy crap.  It was AMAZING.  And I am so glad I got it just for me!!  The rest of the ladies got a fig and prosciutto panini that sounded amazing, and then it didn't as I am pregnant and my taste buds flip flop that quickly!

 Meg made such WONDERFUL food!  This post is dedicated to the stuffed mini peppers that were delish!!!


We had them as a side dish to yummy pork tenderloin (a marinade from my mom that I have been meaning to post!) but I think they would be fabulous as an appetizer as well!


The eight of us ate every last one of these puppies...with very little guilt I might add!

Grilled Stuffed Peppers (serves 4)

1/3 C -  1/3 less fat cream cheese
2 T chopped fresh cilantro
2 T light sour cream
8 mini bell peppers
2 T chopped green onions, more or less
2 T chopped shallots (mild onions worked for me)
1 1/2 T lime juice

Combine all ingredients save the mini bell pepers.  Halve peppers lengthwise and discard seeds.  Divide cheese mix among pepper halves.  Place peppers on grill rack coated with cooking spray over med. heat (I used a grilling pan placed on the rack).  Grill 7 minutes or until charred.

Sunset Salad


I am SO EXCITED for two reasons: 1) This salad was super simple and delish (although Owen literally threw it on the floor, so maybe not as kid friendly as I thought); 2) I FINALLY figured out how to take a decent food picture inside without it turning out orange!!!  I have been taking a photography class and I am LOVING it.  It is all about practice - food sits still so you can take multiple pictures and get it just right.


Little bug does NOT sit still, so again, practice, practice, practice!  I worked REALLY hard to get this picture as he was ALL over the place at the Insect Zoo.  It kind of looks like he is striking a pose as a grass hopper :)  We went to K State Open House this weekend and the Insect Zoo was free.  (Although it is hard to beat the normal admission of $2!)  O got to pet some cockroaches...good thing we had lots of wipes! 


Now then, the food.  I called this salad "Sunset Salad" because I got it out of the January 2012 issue of Sunset Magazine - my FAVORITE mag.  Ever.  It makes me feel like I still live in California :)  The quinoa and the chicken make this little summer salad very hearty and filling.  Owen used to gobble up quinoa, but now that he is obstinate and a pill, he just scoops it out of the bowl and onto a plate, or straight up throws it on the floor.  NEAT!

Quinoa Salad with Chicken, Avocado, and Oranges
Serves 4-6 as a main course

Ingredients
1 1/4 cup quinoa (I used 1 cup dry, per my package instructions)
1 tsp chili powder
3 tsp minced garlic, divided
Zest of 1 lime
2 tsp plus 3 tbsp olive oil, divided
1 tsp each, kosher salt and pepper, divided
1 lb boned, skinned chicken thighs (we used 2 HUGE chicken breasts)
1/4 cup lime juice
4 large oranges, peeled and segmented (I only used two and I cut the segments into thirds)
2 ripe avocados, peeled and cubed
1/2 cup cilantro, chopped
2 scallions (the original recipe didn't call for it, but I thought it would be a nice addition and it was)

*Next Time* I will add celery and some halved grapes - YUM!

Instructions
1)  Cook the quinoa according to the package directions and fluff with a fork.  Transfer to a large bowl and let cool.

2)  We grilled our chicken, but the instructions are for broiling:  Preheat broiler with a rack set 4 to 6 inches from heat.  In a large bowl, stir together chili powder, 2 tsp garlic, the lime zest, 2 tsp oil, and 1/2 tsp each salt and pepper.  Add chicken and toss to coat.  Put chicken on a baking sheet and broil turning once until browned and cooked through, about 12 minutes total.  Let cool slightly, then slice and add to reserved quinoa.

3)  Add remaining ingredients to quinoa and chicken, toss to coat.  (Now, we marinated and BBQ'd the chicken a few days ago and just made the salad tonight.  Had I thoroughly read the instructions I would have known that the "remaining ingredients" includes: 3 tbsp oil, 1/2 tsp each of kosher salt and pepper, and 1 tsp garlic!  Undoubtedly it would be even better if I actually followed the instructions and added all of these remaining ingredients...)

Spring!


We just got back from a week in Truckee - for those of you who are unfamiliar with the Sierra Nevada Mountains, Truckee is just north of Lake Tahoe.  It was fabulous!  Tahoe has had a rough snow season (or so I've heard) but right before we got there, there was a huge storm that dumped 40 inches! I wish I could say I got to go snowboarding, but as I am 18 weeks prego, there was no snowboarding.  We did get to go snowshoeing and sledding, but that was the extent of our outdoor activities!

We bundled up the little man and tucked him into a hiking backpack and he loved it!  He was super snug but threw a fit when we cuffed his hands to keep them warm.  So we un-cuffed and gave him some pine cones.  Look how pleased he is to be holding "pie cones" - he also insisted on holding the poles at one point during our hike.  He LOVED the snow.  One morning, right after it snowed, my mom opened the door to show he and my nephew the fresh snow on the drive. 



Owen took off down the drive and into the street in his sleeper PJs screaming with glee...My nephew, the ultimate beach baby, kept saying "nopey" and wanted absolutely NOTHING to do with the snow.  However, he looked pretty darn cute tolerating the cold weather!  Poor Will.  If Owen could have stayed outside all day in the snow, playing with his sand toys, he would have!




We had a wonderful time with my family and I hope we can go back in the summer next time!

Meanwhile, back in Kansas it is 80*!  Owen is currently playing with the hose and using the same sand toys he used in the snow in his little pool.  What a difference a few thousand miles makes...In honor of this early summer,  I mean spring (summer in KS is WAY hotter than 80* and includes a nice dose of humidity!), we made the most delish grilled chicken salad!  It has yummy grilled asparagus, feta, pita chips, tomatoes, and kalamata olives.  I searched my posts and I cannot believe I've not posted this one yet.  I made it for my sister's baby shower just about 2 years ago and it has been a repeat performer ever since!

PS: I'm taking a photography class to hopefully improve my food-pic taking abilities!!  Oh, and to take better pics of Owen as well :)

Grilled Chicken Pita Salad
Adapted from Sunset Magazine
~Serves 4~

Ingredients
2 boneless, skinless chicken breasts (1 lb total)
About 6 tbsp. EVOO, divided
2 tbsp fresh lemon juice
1 tbsp fresh oregano leaves
1/2 tsp freshly ground black pepper
1 bunch asparagus, trimmed (to trip asparagus, all you do is snap off the ends - they will snap where the woody part meets the meaty part!)
4 ounces, block feta cheese
2 cups halved grape tomatoes
1/2 cup pitted kalamata olives
2 cups pita chips
2 cups loosely packed greens (arugula, baby spinach, baby romaine, spring mix, etc.)
1 avocado, diced

Instructions
Rub the chicken with a little olive oil, salt and pepper.  Grill on medium direct heat for 12 minutes (for a gas grill) or cooked to desired doneness.  Throw the asparagus on there for the last 3-5 minutes - don't over cook!  Wilted asparagus is the worst!  Let the chicken rest for 10 minutes, then slice.  Cut the asparagus in about 2 inch pieces.

In a small bowl, whisk lemon juice, 1/3 cup oil (I used less and will probs only do about 1/4 cup next time), oregano, and pepper; set aside.

In a medium bowl, combine chicken, cheese, asparagus, tomatoes, olives, and pita chips.  (I prefer crisp pitas so we popped them on at the end so they weren't soggy.) Pour reserved dressing over mixture and toss gently to coat. Add greens and toss once more just to combine.  Divide up onto serving plates and top with avocado.

Funny Face


Sometimes while Owen eats lunch, we make funny faces.  On this particular day, I was making a funny grunting sound and he was trying to mimic it - my personal favorite is the first picture.  It shows his little quirky personality.  I LOVE this phase!!!

We have been down for the count this week.  Well, actually, I have been down and Owen has really been a trooper!  He's been great at entertaining himself with his tractors, cars, blocks and new fire truck from "Gamma" Di.  Occasionally this sick momma has allowed a little Thomas or Elmo so that I can rest my eyes!

I did rally for a bit yesterday and made a yummy dinner for the Jman and me.  He has been working really hard and combined with first trimester blahs/head cold, we've been having too much take out!  So I made a yummy, fresh, couscous dish that was even Owen approved!  Now, it has a bunch of steps and takes a bit of time for a "salad" - but it is TOTALLY WORTH IT!  I warned J that if it wasn't fabulous it would be the one and only time I make it.  Well, I will be making this one over and over again, despite the time commitment!

This was my left over lunch serving and I wasn't feeling the chicken, so I added a few more beans.  However, I did eat the chicken the night before and it was delish!


Couscous Salad with Grilled Chicken and Spicy Mustard Vinaigrette
Adapted from Zov, Recipes and Memories from the Heart
~ serves12 to 14 ~ (I cut it by 2/3s when I made it!)

Vinaigrette
6 garlic cloves
1/2 cup rice vinegar
2 Tbsp Dijon mustard
1 Tbsp salt
1 1/2 tsp seasoned salt
1/2 tsp dried crushed red pepper
1/2 tsp ground black pepper
1/2 cup olive oil

Chicken and Couscous Salad
1 Tbsp minced garlic
1 Tbsp chopped fresh rosemary
1 1/2 tsp salt, plus more to taste
1 tsp ground black pepper, plus more to taste
7 Tbsp olive oil
6 boneless skinless chicken breasts
1 pound Israeli couscous*
2 large onions, halved lengthwise and sliced crosswise
1 1/2 pounds asparagus, trimmed, cut diagonally into 3/4 inch lengths and blanched 30 seconds**
4 large carrots, peeled, cut into 1/3 inch pieces and blanched for 2 minutes
4 medium zucchini, halved lengthwise, thinly sliced diagonally and blanched for 30 seconds
2 red bell peppers and 2 yellow bell peppers, roasted, seeded and cut into strips (I roasted mine by cutting in half, pulling out the seeds and membranes and broiling for about six minutes, skin side up.  I then popped them in a ziplock to steam them a bit and peeled most of the skin off!)
1 (15 oz) can garbanzo beans, drained, rinsed and patted dry
1 cup golden raisins or currants (As this is a recipe from a Middle Eastern inspired cookbook, of course there are golden raisins!  LOVED the sweet pop in every other bite!)
3/4 cup pitted Kalamata olives (If you have an aversion to olives, I get it.  However, the Kalamata olives added a wonderful saltiness to the dish that might be lacking if left out - just take note that you may need salt if you leave them out!)

Instructions

1) To make the vinaigrette: Mince the garlic in a food processor (I didn't want to dirty one more hand wash only instrument, so I used my garlic press and threw everything in a bowl and whisked it.  I bet the vinaigrette would have emulsified better if I had...).  Blend in the vinegar, mustard, salt, seasoned salt, crushed red pepper, and black pepper.  With the machine running, gradually blend in the oil.  Cover and refrigerate the vinaigrette. 

2)  To grill the chicken:  Prepare the barbecue for medium-high heat.  Whisk the garlic, rosemary, 1 1/2 teaspoon salt, 1 tsp black pepper, and 2 tablespoons of oil in a small bowl to blend.  Rub on the chicken breasts.  Grill the chicken until they are just cooked through, about 4 minutes per side.  (I did this on my grill pan and made the mistake of not evening out my chicken breasts - be sure to use a meat mallet and even them out or cooking time may vary!)  Transfer chicken to a platter and refrigerate until it is cold.  Cut the chicken breasts crosswise into thin slices.  Cover and refrigerate the chicken. 

3)  To make the couscous salad:  Bring a large pot of water to boil over high heat.  Add the couscous.  Return the water to a boil and cook until it is al dent, stirring occasionally, about 5 minutes.  Do not over-cook the couscous, since it will soften further as it cools.  Drain the couscous well, then transfer to a large bowl, and toss it with 2 tablespoons of oil to coat.  Cool to room temp.  (I used a box of Trader Joe's Israeli couscous and followed the directions on the box which were much more like cooking regular couscous.) 

4)  Meanwhile, heat the remaining 3 tablespoons of oil in a heavy large skillet over high heat.  Add the onions and saute until they are brown and caramelized, about 15 minutes.  Cool completely.  (You may need to adjust the heat because you don't want the onions to cook too quickly or they won't caramelize, they will just burn.)

5)  Add the onions, asparagus, carrots, zucchini, peppers, beans, and raisins to the coucous.  The vinaigrette, chicken and couscous salad can be made up to this point at least 1 day ahead.  Cover each separately and keep them refrigerated.  Re-whisk vinaigrette before using.

6)  Just before serving, toss the salad with enough vinaigrette to moisten.  Season to taste with more salt and pepper.  Transfer the salad to a large serving bowl or platter.  Arrange the sliced chicken atop the salad.  Garnish with the olives and serve!

* Israeli couscous is larger than regular couscous, with a diameter about the size of black peppercorns.  It is sometimes called pearl couscous.  If you can't find it, you can substitute regular couscous or orzo. 

** Blanching is the process of tenderizing veggies and brightening their colors.  To blanch, simply bring a pot of water to a boil and dump the veggies in for the recommended time.  Pull them out with a slotted spoon and immediately dunk them in ice water to stop the cooking process.  I LOATHE uncooked zucchini, so I was dubious that this would work.  I was pleasantly surprised - loved blanched zucchini!

My Baby is ONE??!



I cannot believe my little mister turned ONE this month!! Where did the time go?? One minute we were spending quality time gazing at our view of the K State football stadium from our hospital room, the next he is walking, talking and showing DEFINITE signs of toddler-hood!

Ah, the cake eating went well...here he is demanding more! My mom made a giant hummingbird cupcake - I will save that post for later. SO GOOD! It took O a while to figure out what he was supposed to do with the cake. But, of course, Jeremy had no problem diving in and showing him exactly what to do...

So much awesomeness. Unfortunately, Owen has the taste of cake in his mouth now and has been refusing foods he used to eat...like peas, carrots and corn. Neat! Unfortunately for the little man, sugar is off the menu for the better part of the next year or so!


For the little man's birthday party we made sizzling chicken fajitas - my super fave! If anyone asked what my last meal would be, I would request chicken fajitas, guacamole, and creme brulee. Seriously. I LOVE chicken fajitas. Well, I should preface, that I love my chicken fajitas :) My mom gave me this marinade and I ALWAYS get compliments on it! In fact, I may have blogged this recipe before...

Please note the sock monkey super hero guarding the chicken fajita fixings! He did a great job as we had left overs :)

Chicken Fajita Marinade

Ingredients

3 whole chicken breasts (i.e. 6 breasts), skinned, boned, cut into halves
1/2 cup vegetable oil
1/3 cup lime juice
2 cloves garlic, minced
1 tsp tried oregano
1/2 tsp each salt & pepper
1/4 tsp ground cumin
1/4 cup red wine vinegar
1/4 cup finely chopped onion
1 tsp sugar

Instructions
Rinse chicken thoroughly and pat dry. Mix all ingredients together (except chicken) in a non-metal dish. Add chicken, turning to coat. My mom mixes the marinade in a measuring cup, then pours into a ziplock bag with the chick. Refrigerate 4 hours. When preparing the chicken, pound it out so that it is even in thickness so it grills evenly.

If you make these for guests, you will be known as a rock star cook - I PROMISE!!

Mojo


Doesn't Owen look like he has a real life "flavor saver" or "soul patch??" I called him Pierre the rest of the evening. We are motoring along with real food. Prunes and Peas were NOT a hit. He cried a whole lot and at one point, Jeremy squeeze O's cheeks and he had been saving the peas like a little squirrel. Ah, the joins of big kid food!


Now then, for real life big kid food: "Grilled Mojo Chicken." TO.DIE.FOR. I pulled this little gem out of my Williams Sonoma Weeknight cookbook and we LOVED IT. It was even better on a salad the next day with some cilantro Caesar dressing with pepitas and tortilla chips. I LOVE FOOD.

Ingredients:
1 Orange
2 Limes
4 tbsp fresh flat leaf parsley, minced
1 tbsp fresh oregano, minced
1 tbsp fresh thyme, minced
3 cloves garlic, minced
2 tsp ground cumin
1/4 cup olive oil
4 skinless, boneless chicken thighs or breast halves (I used my usual boneless, skinless breasts. I have a real life aversion to dark meat, bones, and skins.)
Salt and freshly ground pepper

Instructions:
1) Grate 2 teaspoons zest form the orange and squeeze 1/3 cup juice. Grate 1 teaspoon from the limes and squeeze 1/4 cup juice. In a shallow dish large enough to hold the chicken in a single layer, stir together the orange and lime zest and juices, 2 tablespoons of the parsley, the oregano, thyme, garlic and cumin. Stir in the oil. Season the chicken generously with salt and pepper. Add the chicken to the marinate and turn to coat. Let stand at room temperature for 10minutes, or cover and refrigerate for up to 2 hours. (We let it stand at room temp for 30 minutes before we had a chance to grill it.)

2. Meanwhile, prepare a gas or charcoal grill for direct heat grilling over medium-high heat and oil the grill rack. Or, preheat a broiler. When ready to cook, remove the chicken from the marinade discarding the marinade. Place the grill rack, or put on a baking sheet and place under the broiler. Cook, turning once, until opaque through, 10-14 minutes. Divide the chicken among 4 plates, sprinkle with the the remaining 2 tablespoons parsley and serve.

Flava Fave of 2010...


It has been quite some time...it was a very busy season! I have so much to post, but it is January 10, 2010 and my apartment is still littered with random Christmas decorations. It's positively shameful. Alas, my goal is tomorrow night!

Back to the food at hand. The above picture truly does not give this dish justice. First of all, we were so excited to try these Enchiladas with Pumpkin sauce that we just dug in. Second, our fancy camera was out of batteries so my slick doctoring of the picture was just not an option.

J Man agreed to make dinner if I agreed to put Christmas away. Someone followed through with his end of the bargain, and someone did not...J Man made the BEST enchiladas; I'm hoping for many repeats! What's not to like: pumpkin (one of my absolute fave ingredients) and cheese!!

Enchiladas with Pumpkin Sauce
Serves 4 - from Great Food Fast

Ingredients

1/2 rotisserie chicken, skin removed, meat shredded (J man is forever in charge of dismembering a chicken carcass - those bones were picked dry! And let me just tell you, a rotisserie chick is going to save you a TON of time!)
6 scallions, thinly sliced
Coarse salt and fresh ground pepper
1 can (15 ounces) pumpkin puree
4 garlic cloves, peeled
1 jalapeno chile, quartered (remove ribs and seeds for less heat, if desired)
1 tsp chili powder
8 corn tortillas (6-inch)
1 1/2 cups (6 ounces) grated sharp white Cheddar cheese

Instructions

1. Preheat the oven to 425*. In a medium bowl, combine the chicken and scallions. Season generously with salt and pepper; set aside.

2. In a blender, puree the pumpkin, garlic, jalapeno, chili powder, 2 1/2 cups water, 2 tsp salt, and 1/4 tsp pepper until smooth (hold the top firmly as the blender will be quite full). Pour 1 cup of the sauce in the bottom of an 8-inch square (or other shallow 2-quarter) baking dish.

3. Lay the tortillas on a work surface; mound the chicken mixture on half of each tortilla, dividing evenly. Roll up each tortilla into a tight log; place seam side down over the sauce int eh baking dish.

4. Pour the remaining sauce on top; sprinkle (generously, goes without saying, right?) with the cheese. Place the dish on baking sheet; bake until the cheese is golden and the sauce is bubbling, 25-30 minutes. Let cool for 5 minutes before serving.

Noodle Soup Who?

As a kid, whenever we were sick, my mammy made Chicken Soup with Rice. Sometimes I would feel sorry for myself that we never got chicken noodle soup like all the other kids. But then I'd take one bite of this succulent, flavorful deliciousness and I felt sorry for the other kids! And now, I make it during the winter just because - no need to be sick to make this delectable heart-warming treat!

This recipe is adapted from "Thermador's Convection Micro-Thermal Cooking Guide" - not that I'm lucky enough to have a Thermador oven! My mom assisted in writing the recipes for this one. Someday I hope to be creative enough to write recipes too!!

Chicken Soup with Rice
Makes 4-6 servings (I always double it)

**This is one of those recipes where you can add more or less of anything. I will give you the measurements from the recipe, but I actually do a heaping cup of each veggie and about one extra cup of chicken broth - the rice sucks it up, and if you don't add more broth, your left overs will look more like a stew.**

Ingredients
6 cups chicken broth (I boil the chicken breasts in a pot of water (just enough water to cover the breasts with about 1 extra inch of water) with the tops of celery, chunked up onions, salt, pepper, and sometimes fresh parsley. After the chicken is cooked, I strain the stock and use the left over liquid as part of the 6 cups of chicken broth directed above.)
2 cups diced, cooked chicken (about 3 breasts - see above for instructions on how to cook)
1/2 cup finely chopped celery
1/3 cup diced carrots
1/3 cup finely chopped onion
1/4 cup long grain rice
2 tablespoons finely chopped green pepper (I use any color - whatever I have, and I always use a whole pepper)
2 sprigs parsley, minced
1 teaspoon salt (I recommend you use Kosher salt if you use your left-over stock which is already fairly salty)
1/4 teaspoon pepper
1/4 teaspoon dried thyme, crushed
1 bay leaf
2-3 whole cloves

Instructions:
Throw it all together and cook until the rice is done. Usually about 20-25 minutes. Serve it up with some yummy crusty bread and enjoy! A.M.A.Z.I.N.G.

Get Grilling


We have been getting amazing, I mean absolutely amazing, fruit and veggies from our farm co-op.  This past week we have gotten more peaches than we know what to do with!  I was flipping through the July 2009 Real Simple and came across a treasure trove of 20 minute summer meals - so far we've tried two and both have been fantastic!  And, oh by the way, the J Man made this delectable dish of grilled chicken, grilled peaches, and grilled onions!  YUM.  And no, we are not violating Arlington County's restriction on BBQ's, we used are fabulous All Clad grill pan...I love me some All Clad.  Fo shizzle.

Chicken with Grilled Peaches and Arugula
Serves 4 - Real Simple, July 2009

Ingredients

4 6-oz boneless skinless chicken breasts (I always put them in between some plastic wrap and pound them with a meat mallet so they cook a little more evenly...)
2 tablespoons plus 1 teaspoon olive oil
2 medium red onions, sliced into 1/2 inch thick rounds (not an exact science...I used one large onion and sliced the rings in halfster)
3 peaches, cut into wedges (if they are on the small side, like my organic ones are [and man are they delish!!] just throw one more in there)
1 bunch arugula, thick stems removed (about 4 cups) (and again, didn't really follow this one...we used mixed baby romaine)
2 tablespoons balsamic vinegar
2 oz blue cheese, broken into pieces

Instructions

> Heat grill to medium-high (or if you are going for the grill pan option, medium-high on the burners).  Brush the chicken with 1 teaspoon of the oil and season with 1/2 teaspoon each salt and pepper.  In a bowl, toss the onions, peaches, 1 tablespoon of the oil, and 1/4 teaspoon each salt and pepper.

>Grill the chicken and onions until the chicken is cooked through and the onion are tender, 5-6 minutes per side.  Grill the peaches until charred, 2 minutes per side.

>Toss the arugula (or baby romaine) with the onions, peaches, vinegar, and remaining oil.  Top with the cheese; serve with the chicken.

Puttanesca and Peas

Hello foodies, Coxina here.
I fed some friends last night with these two lovely and super easy recipes. Alas, no pictures, but I haven't figured out how to post pics on the blogspot yet anyfood... (aaah yee-ah!)

Chicken Thighs with Tomatoes, Olives, and Capers
from Best of Cooking Light, serves 4

Ingredients

* 8 skinless, boneless chicken thighs
* 1/2 tsp salt
* 1/4 tsp black pepper
* 1 tsp vegetable oil
* 1 T. bottled minced garlic
* 1 C. chopped fresh parsley
* 1/4 C. chopped pitted kalamata olives
* 2 tsp capers
* 1 (14.5-oz) can no-salt-added diced tomatoes, undrained


Directions

1. Sprinkle chicken with salt and pepper.
2. Heat oil in a large nonstick skillet over medium-high heat.
3. Add chicken; cook 4 minutes on each side. Remove chicken from pan; keep warm.
4. Add garlic to pan; sauté 30 seconds. Add remaining ingredients; scrape pan to loosen browned bits.
5. Return chicken and accumulated juice to pan; reduce heat, and simmer 5 minutes or until chicken is done.

We had it with rice to sop up the juices, or you can have it with some delicious bread. I guess pasta would make sense too, riiight?

To accompany the chicks, and the crowd favorite, Pesto Pea Salad
from Ina's Barefoot Contessa At Home, serves 4 to 6

Ingredients
* 1/4 pound baby spinach leaves
* 1 (10 oz) package frozen peas, defrosted
* 1/2 cup prepared pesto
* 1/4 cup freshly grated Parmesan cheese
* 1 teaspoon kosher salt
* 2 tablespoons toasted pine nuts


Directions

Wash the spinach leaves and spin them dry. Place the spinach and the peas in a large bowl. Add the pesto and Parmesan, then sprinkle with salt. Toss well, sprinkle with pine nutes, and serve.

Note: To toast pignolis, place them in a dry saute pan and cook over medium-low heat, tossing frequently, for about 5-10 minutes until evenly browned.

Looking forward to making this salad again soon. It will be great for summer too. Just a footnote, we finished off our meal with... the dump cake! It's fan base is building!

I just couldn't wait.

Seriously. This tandoori chicken was SO GOOD. My friend Heather made it for me one Monday whilst we watched the Bachelor (like I said earlier, don't be a hater). It was delish, so I thought I'd try my hand at it. We literally finished eating about 10 minutes ago - I just couldn't wait to share the news that it is AMAZING.

The recipe calls for chicken breasts, thighs, and drum sticks. I picked out one tray of drum sticks and after about 10 minutes I had to walk away - I had been staring at the other chicken pieces and it was getting to me. I'm a total wimp when it comes to bone in skin on chicken - and that is what it calls for. But then it tells you to take the skin off. Next time I'm getting bone in skin off. I was absolutely horrified as I was removing the skin. Groady to the max. Anyfood, like I said, it called for all sorts of parts, but I just did the drum sticks as it was just Little Jerry and me and we did not need a ton of left overs!

Tandoori Chicken

Serves 4. Published January 1, 2009. From Cook's Illustrated.

INGREDIENTS

2tablespoons vegetable oil
6medium garlic cloves , minced or pressed through garlic press (about 2 tablespoons)
2tablespoons grated fresh ginger
1tablespoon garam masala (I went to Penzy's Spices for the first time today to get me some garam masala - totally worth it. I didn't get out of there without spending $20 on spices. It was so great - find one and get there! If you can't find garam masala, you can make it the following way: 2 teaspoons ground coriander, ¼ teaspoon ground cardamom, ¼ teaspoon ground cinnamon, and ½ teaspoon ground black pepper)
2teaspoons ground cumin
2teaspoons chili powder
1cup plain whole-milk yogurt (I used plain Greek yogurt from Trader J's - didn't notice a difference)
4tablespoons juice from 2 limes, plus 1 lime, cut into wedges
2teaspoons table salt
3pounds bone-in, skin-on chicken parts (breasts, thighs, and drumsticks, or a mix, with breasts cut in half), trimmed of excess fat and skin removed (how lame is this instruction? Just get bone in skin off - whateves yo, you don't need the extra work)

**Chopped Cilantro

INSTRUCTIONS

  1. 1. Heat oil in small skillet over medium heat until shimmering. Add garlic and ginger and cook until fragrant, about 1 minute. Add garam masala, cumin, and chili powder; continue to cook until fragrant, 30 to 60 seconds longer. Transfer half of garlic-spice mixture to medium bowl; stir in yogurt and 2 tablespoons lime juice and set aside. (Seriously, it smells SO GOOD)

  2. 2. In large bowl, combine remaining garlic-spice mixture, remaining 2 tablespoons lime juice, and salt. Using sharp knife, lightly score skinned side of each piece of chicken, making 2 or 3 shallow cuts about 1 inch apart and about 1/8 inch deep; transfer to bowl. Using hands, gently massage salt-spice mixture into chicken until all pieces are evenly coated; let stand at room temperature 30 minutes.

  3. 3. Adjust oven rack to upper-middle position (about 6 inches from heating element) and heat oven to 325 degrees. Pour yogurt mixture over chicken and toss until chicken is evenly coated with thick layer. Arrange chicken pieces, scored-side down, on wire rack set in foil-lined, rimmed baking sheet or broiler pan. Discard excess yogurt mixture. Bake chicken until instant-read thermometer inserted into thickest part of chicken registers 125 degrees for breasts and 130 for legs and thighs, 15 to 25 minutes. Smaller pieces may cook faster than larger pieces. Transfer chicken pieces to plate as they reach correct temperature. (My sticks took about 25 minutes to register 130*)

    1. 4. After removing chicken from oven, turn oven to broil and heat 10 minutes. Once broiler is heated, flip chicken pieces over and broil until chicken is lightly charred in spots and instant-read thermometer inserted into thickest part of chicken registers 165 degrees for breasts and 175 for legs and thighs, 8 to 15 minutes. (My birdies took about 10 minutes) Transfer chicken to large plate, tent loosely with foil, and rest 5 minutes. Serve with chutney or relish, passing lime wedges separately. (Um, I am just reading this instruction right now - totally didn't do this step as it was 9:30 PM and we were a wee bit hungry. But kind of Euro to eat at 9:30, right?)

      **I sprinkled chopped up cilantro on top - not called for, but totally worth it.

      Okay, so I've not be blogging too much lately. That is for one reason, and one reason only. I've been addicted to my needles -- my knitting needles that is. So I though I'd share a few pics of my projects to show you what I've been up to. I'm sad that my two loves are competing, but I think today I struck a good balance. But I shall sign off soon in order to get back to my socks!

My first pair of socks! I have about 9" of the cuff done, and now I'm working on the heel. I got this fun yarn in Germany at the Rottenberg Christmas Market.
This is my first tank! It has been a long journey getting this baby put together - but I'm almost done! As soon as its finished, I might even post a picture of me modeling it - cannot wait to get it done!
