My Baby is ONE??!



I cannot believe my little mister turned ONE this month!! Where did the time go?? One minute we were spending quality time gazing at our view of the K State football stadium from our hospital room, the next he is walking, talking and showing DEFINITE signs of toddler-hood!

Ah, the cake eating went well...here he is demanding more! My mom made a giant hummingbird cupcake - I will save that post for later. SO GOOD! It took O a while to figure out what he was supposed to do with the cake. But, of course, Jeremy had no problem diving in and showing him exactly what to do...

So much awesomeness. Unfortunately, Owen has the taste of cake in his mouth now and has been refusing foods he used to eat...like peas, carrots and corn. Neat! Unfortunately for the little man, sugar is off the menu for the better part of the next year or so!


For the little man's birthday party we made sizzling chicken fajitas - my super fave! If anyone asked what my last meal would be, I would request chicken fajitas, guacamole, and creme brulee. Seriously. I LOVE chicken fajitas. Well, I should preface, that I love my chicken fajitas :) My mom gave me this marinade and I ALWAYS get compliments on it! In fact, I may have blogged this recipe before...

Please note the sock monkey super hero guarding the chicken fajita fixings! He did a great job as we had left overs :)

Chicken Fajita Marinade

Ingredients

3 whole chicken breasts (i.e. 6 breasts), skinned, boned, cut into halves
1/2 cup vegetable oil
1/3 cup lime juice
2 cloves garlic, minced
1 tsp tried oregano
1/2 tsp each salt & pepper
1/4 tsp ground cumin
1/4 cup red wine vinegar
1/4 cup finely chopped onion
1 tsp sugar

Instructions
Rinse chicken thoroughly and pat dry. Mix all ingredients together (except chicken) in a non-metal dish. Add chicken, turning to coat. My mom mixes the marinade in a measuring cup, then pours into a ziplock bag with the chick. Refrigerate 4 hours. When preparing the chicken, pound it out so that it is even in thickness so it grills evenly.

If you make these for guests, you will be known as a rock star cook - I PROMISE!!

I made fajitas from a seasoning mix last night. They were okay. I can't wait to try these instead, thanks! ps happy birthday Owen! Time flies!
